For the “month of love” I thought I’d share a recipe that is perfect for an at home date night. This recipe calls for salmon, but you could easily swap it out for chicken or pork. All would be equally as delicious!!! You can also swap the apricot jam out for peach or even orange!
Ingredients:
2 – 6oz. Salmon filets
Kosher salt and freshly ground pepper
¼ c. apricot jam
2 T. honey, maple syrup or agave nectar
1 T. bourbon of your choice
1 tsp. Garlic powder
1 T. adobo sauce
- After preheating the oven to high broil, lay your salmon on a baking sheet that’s been sprayed with nonstick spray. Season both sides with salt & pepper.
- Mix together the jam, honey, bourbon, garlic powder and adobo sauce.
- Generously brush the glaze on all sides of the salmon.
- Place salmon on the top shelf of the oven and broil for 6-10 minutes.
- Remove the salmon and let sit for 3-5 minutes.
- Feel free to add any leftover glaze to the salmon.
- Serve with steamed green beans and caesar salad.
