Now Serving: Cheesy Baked Chicken!

Hi friends!  It’s so crazy how fast summer is flying by, it seems like just yesterday everyone was looking forward to summer, and already the kids are back to school!  Activities are kicking into high gear, and schedules are getting fuller, which means quick and healthy meals are top priority. This month’s Now Serving is a simple, delicious dinner that’s sure to please even the pickiest eaters because chicken and cheese are a winning combo!  Paired with quick preparation and a cook time just long enough to fix a couple of easy sides, maybe a salad mix, or rice or veggies prepared in your favorite way, it makes for the perfect meal! Now Serving Cheesy Baked Chicken!

Serves 4
1 cup sour cream
2 tsp garlic powder
1 tsp of your favorite seasoning salt
1/2 tsp ground black pepper
1.5 cups grated parmesan, divided into 1 cup and a half cup.
3 lbs boneless, skinless chicken breasts

1. Preheat your oven to 375 while you prepare the cheese mixture.
2. Spray a 13×9 baking dish with cooking spray.
3. Arrange the chicken breasts evenly in a single layer in the baking dish and mix the remaining ingredients in a medium bowl, saving half a cup of Parmesan cheese.
4. Evenly spread the cheese mixture over the top of the chicken, and sprinkle with remaining Parmesan. 
5. Bake 25- 30 minutes, or until the juices of the chicken run clear when cut in the thickest part.

As for baking, I had a home based bakery, creating custom cakes and cheesecakes, as well as competed in the Garfield County Fair baking competitions. I opened Sweets of Enid in April of 2022, and with three of my four children currently on staff, it’s been a wild ride! I’m now so excited and honored to share my collection of recipes of all kinds, not just baking related!
